«Squires»
Ingredients:
- 250
grs of sugar ;
- 250
grs of almonds ;
- fios
de ovos (an egg yolk sweet) to taste ;
- Malabar
gourd preserve to taste ;
- ovos
moles (an egg yolk sweet) to taste ;
- 2
egg yolks ;
- icing
Preparation:
Place
the sugar on the flame with a little water.
When the water boils, add the peeled, raw, ground almonds. Boil a
little longer, then take the mixture off the stove and add the two egg
yolks. Stir well and knead a little.
Make small balls with a hole in the middle. Place the Malabar gourd
preserve, «ovos moles» and «fios de ovos» in the hole which is
then covered with some of the mixture.
Place them in a buttered and floured tray and bake them in a medium
oven until they are slightly brown.
Take them out of the oven and off the tray and let them cool. When
they are cold, cover them with icing and let them dry.
