Pees,
          Portimão Style 
           
          
          
          
          Ingredients:

            - 3
              kg of spring peas in the pod ;
 
            - 1
              bunch of parsley ;
 
            - 150
              grs of onions ;
 
            - 1
              dl of olive oil ;
 
            - 100
              grs of lard ;
 
            - 100
              grs of sausage (chouriço) ;
 
            - 4
              eggs ;
 
            - salt
              to taste ;
 
            - pepper
              to taste ;
 
            - water
 
           
          Preparation: 
          Pod
          and wash the pees. Peel the onions and mince them. Slice up the
          sausage after removing its skin. 
          Place the olive oil and lard in a pan and put it on the flame. Add the
          onions, sausage and the bunch of parsley. Let the onions brown. 
          Add the peas and fry them for a few minutes. Cover with water. Season
          with salt and pepper and cook after covering the pan. 
          Take out the bunch of parsley. 
          Finally, break the eggs and place them one at a time on the peas; the
          eggs should be cooked together with the peas. 
          Hint:
          If spring peas are not available, use frozen or tinned peas.
